Tea Air

INGREDIENTS:

1 Liter milk
200 grams muscovado sugar
20 grams lapsang soochong tea
10 grams lecithin

METHOD:

Bring milk and sugar to a boil; infuse tea for 4 minutes. Strain, add lecithin, and froth with emulsifying blade of immersion blender.
