For the Ginger Syrup:
In a medium pot, combine ginger, sugar, and water and bring to a boil. Remove from heat and steep 1 hour. Strain and chill
For the Valhalla Rising:
In a shaker combine Aquavit, Sherry, ¾ ounce Ginger Syrup, and lime juice and shake well. Pour into a highball glass with a few large rock ice cubes. Top with Pale Ale and garnish with Candied Ginger.
