Tok-Cel Lima Beans

INGREDIENTS:

½ pound fresh or frozen Fordhook lima bean
1 tablespoon sesame oil
1 bunch green onions, finely chopped
½ bunch parsley, finely chopped
6 ounces ground roasted pumpkin seeds
salt
1 lemon, halved

METHOD:

Heat oven to 350 degrees. If using fresh beans, blanch them in boiling water for 1 minute, rinse, and dry. If using frozen beans, defrost. In a large skillet over medium flame, heat oil. When oil starts smoking, throw in the lima beans. Sauté until lightly browned and tender but still toothsome. Add green onions, parsley, and ground pumpkin seeds. Season with salt and sauté 1 minute. Remove from heat, season with lemon juice, and serve.
