La Zi Ji: Fried Chicken, Dried Chiles, and Sichuan Pepper

Yield: This recipe for Sesame Seed Oil produces 48 teaspoons.

INGREDIENTS:

8 grams fully cured Hindu Kush
8 ounces sesame oil
Large canning jar

METHOD:

Step 1

Decarboxylize the cannabis. Preheat your oven to 220 degrees F. Take a baking sheet and line it with parchment paper that will not burn in the oven. Very carefully sprinkle the ground up Hash Plant onto the sheet making sure that it is evenly disbursed. Place the baking sheet into the oven uncovered and heat for 25 minutes. Pull the baking sheet from the oven, and let it cool completely. Be very careful when removing it from the pan. You now have decarboxylized or “activated” cannabis.

Step 2

On the stove add the sesame seed oil and ground cannabis into the canning jar and seal tight. Make a double water bath in a double boiler then turn the stove top onto a low setting. Make sure to completely stir in the ground cannabis so that it is completely covered by the oil. Cover and cook this mixture for 1 hour at 212 degree F then remove from heat. Strain with a fine mesh strainer or cheese cloth into a measuring cup. 

Step 3

After the sesame seed oil cools completely pour into a sterilized glass bottle of your choice then secure the cap tightly. Store your cannabis infused truffle oil in the refrigerator or in a cool dark place at room temperature. This olive oil will have a shelf life of 1 month when refrigerated.

As a precaution, under no circumstances should the cannabis have any traces of moisture content left in them. Any amount of water no matter how minute will create the perfect environment in the oil to breed bacteria and can create toxins such as botulism when in long term storage. Make sure the cannabis is 100% cured before infusing. 

Product Dose

Always shake the bottle before dosing. Hindu Kush can test between 15% - 20% THC depending on phenotype, so do the math accordingly. If one gram of Hindu Kush tests at 20% THC, twenty percent of 1,000mg would be 200mg. So if you added 8 grams worth of Hindu Kush into the total recipe at 20% THC and had 48 servings it would be: 33.3mg per serving. Sub the number of your THC percentage and do the math to figure out your dosing. If you want a smaller dose adjust accordingly by lowering the amount of flower used or adding more flower for a larger dose.
