Tequila, Smoked Almonds, and Amaretto Disaronno

Yield: 1 Cocktail


Smoked Sea Salt Foam
1 tablespoon smoked sea salt
2 cups boiling water
1 pinch lecithin
To Assemble and Serve
2 ounces silver tequila
1 ounce Amaretto Disaronno
1 ounce freshly squeezed lime juice
1 ounce simple syrup
1 teaspoon toasted almond slices


For the Smoked Sea Salt Foam:

Mix the salt, water, and lecithin until the salt has dissolved. Pass the mixture through cheesecloth a few times until it becomes clear, and then put it in a bowl. When you’re ready to serve the drink, create the foam, using a milk frother, until the liquid becomes bubbly and foam forms.

To Assemble and Serve:

In a cocktail shaker, shake 8 to 10 ice cubes with the tequila, amaretto, lime juice, and simple syrup. Strain the mixture into a martini glass. Scoop up 1 teaspoon of the Smoked Sea Salt Foam and put it on top of drink somewhat like a quenelle. Scatter the toasted almond slices so they float on top of the drink. Do not to use slivered almonds beacause they sink to the bottom of the drink.
