Gin Lemonade

Yield: 1 cocktail

INGREDIENTS:

Honey-Thyme Syrup
1 handful thyme
1 cup hot water
1 cup honey
Grilled Lemons
lemons, halved
To Assemble and Serve
2 ounces Beefeater gin
¾ ounce Grilled Lemon Juice
¼ ounce lemon juice
¾ ounce Honey-Thyme Syrup
¼ ounce Batavia arrack
Soda water
Dehydrated lemon wheel
Thyme sprig

METHOD:

Honey-Thyme Syrup

Steep thyme in hot water for 3 minutes. Strain thyme-water twice into a small mixing bowl with honey. Whisk until honey dissolves completely. Chill.

Grilled Lemon Juice

Prepare and heat grill. Grill lemons cut-side down until heated through and charred, about 3 minutes. Transfer lemons to bowl, let cool slightly, and juice. Chill.

To Assemble and Serve

In a shaker with ice, combine gin, Grilled Lemon Juice, lemon juice, Honey-Thyme Syrup, and Batavia Arrack. Shake and double strain into a rocks glass with fresh ice. Top with soda and garnish with dehydrated lemon wheel and thyme.
