Smoked Sicilian Manhattan

Yield: 1 Cocktail

INGREDIENTS:

1½ ounces smoked Maker’s Mark bourbon
½ ounce Averna amaro
4 drops Stirrings blood orange bitters
3 brandied cherries

METHOD:

Stir the smoked bourbon, Averna Amaro, and blood orange bitters in a mixing glass with ice. Strain into an old-fashioned glass filled with 4 large ice cubes. Garnish with 3 brandied cherries.

Note: At The Bristol, Peek cold smokes liter bottles of Makers Mark in a 4-inch half hotel pan using an industrial smoker. The Bourbon is "cold smoked" for approximately 45 minutes with alderwood chips.
