Prosciutto-wrapped Roasted Pears with Taleggio Cheese

Yield: 20 Pieces

INGREDIENTS:

5 Bosc pears
olive oil
salt
black pepper
20 slices Prosciutto di Parma
20 ounces taleggio cheese
20 skewers or toothpicks
arugula

METHOD:

Preheat the oven to 300ºF. Quarter and core the pears, toss with olive oil, salt, and pepper. Place on sheet pan in oven for 15 minutes. Turn pears and cook for additional 15 minutes or until both sides are caramelized. Let cool.

Lay the prosciutto out on table. Place one piece of the pear and one piece of the cheese on the prosciutto. Roll into a tight package and skewer. Place on sheet pan and into the oven for 1½ minutes or until the ham firms up. Let cool.

To Assemble and Serve:

Skewer each piece. Serve on a cutting board or over a thin layer of arugula.
