¾ ounce lemon
½ ounce honey
1 ounce lavender- and sage-infused Bianco vermouth
2 ounces Aviation or Plymouth gin, or 2 ounces vodka
1 sprig sage
Add the lemon, honey, vermouth, and gin to a cocktail shaker filled with ice. Shake well. Strain the mixture into a chilled Collins glass. Top with the soda. Garnish with a sprig of sage.
