½ barspoon pink Himalayan sea salt
1 liter distilled water
½ ounce yellow Chartreuse
½ ounce honey syrup (50:50 water to honey)
2 lemon wheels
¾ ounce Boomsma Genever Oude
¾ ounce Pear Williams Purkhart
Sea-salted soda water
For the Sea-salted Soda Water:
Dissolve the Himalayan sea salt in the distilled water. Chill and charge with soda siphon.
To Assemble and Serve:
In an Old Fashioned glass, combine 1 lemon wheel, the yellow chartreuse, and honey syrup and very gently express the lemon wheel. Add the genever, Pear Williams Boomsma, and ice and stir. Top with the Sea-salted Soda Water and finish with the second lemon wheel.
