Cold Brew Coffee

Yield: 1 coffee

INGREDIENTS:

130 grams filtered water, plus additional as needed
200 grams ice, plus additional as needed
28 grams medium ground Vigilante coffee

METHOD:

In a kettle, heat water to 205°F. Place filter in Kalita Wave Dripper and pre-wet. Fill pour-over kettle with 200 grams ice. Add ground coffee to filter and bloom with 70 grams filtered water. Allow to bloom 30 to 45 seconds. Break the bloom using proper pour technique, slowly pouring in a thin, steady stream of the remaining hot water while raising the kettle higher about the coffee. When coffee streaming from filter begins to reduce to a drip (about 2 to 3 minutes), swirl pour-over kettle to dissolve ice and chill coffee. Pour into a glass filled with fresh ice and serve immediately.
