Avenue's Hot Chocolate

INGREDIENTS:

1 quart whole milk
4 ounces Valrhona cocoa powder
1 1/2 ounces sugar
6 ounces Valrhona chocolate, chunks
1 tablespoon homemade vanilla

METHOD:

1. Pour milk and cocoa into a saucepot, bring to a simmer and add sugar.

2. Reduce heat to very low and add chocolate stirring occasionally until melted, about 3-5 minutes.

3. Strain hot chocolate through a sieve and finish with vanilla. Hot chocolate can be topped off with homemade marshmallows or whipped cream.
