Combine chopped apples and simple syrup (as needed) in a blender, and purée until smooth. Use the purée as soon as possible or it will turn brown. Do not be tempted to add lemon to this mixture-it will ruin the taste.
Combine equal parts sugar and water in a sauce pot and bring to a boil, reduce to a simmer and cook just until sugar is dissolved. Remove from heat and cool before using. Edwin Santana creates specialty drinks and bartends at Masat, affectionately referred to as M Bar, in Manhattan.
Pour ingredients into a shaker filled with ice. Shake well for about 10 seconds. Strain into chilled martini glass. Garnish with an apple wheel.
