Emmi Roth USA Awards $5,000 Educational Scholarship to Iulian Fortu at The Culinary Institute of America

MONROE, Wis. — Emmi Roth USA, an award-winning producer of specialty cheeses, has announced the winner of its 2015 Student Scholarship at The Culinary Institute of America (CIA). Iulian Fortu, who is pursuing an Associate in Occupational Studies degree at the CIA’s Hyde Park Campus, received the $5,000 scholarship for his Apple Caesar Gratin recipe.The scholarship application process required students to submit an original recipe highlighting Roth® Grand Cru®, a washed rind Alpine-style cheese crafted in Wisconsin. Fortu selected Roth® Grand Cru® Reserve, an aged version of the cheese, to use in his recipe.“I decided to use the Grand Cru® Reserve for the Apple Caesar Gratin recipe,” Fortu said. “The recipe is a seasonally-inspired take on a classic salad, incorporating the vibrant sweetness of apples and the hearty, nutty flavor of Grand Cru® Reserve. This recipe uses the particular qualities of Grand Cru® Reserve to not only enhance the flavor of the salad, but also to showcase the versatility of the cheese.” Fortu, a native of Fairfax, Va., is on track to graduate in the spring of 2016 and subsequently plans to obtain a Bachelor of Professional Studies with a concentration in Culinary Arts Management. Fortu has plans to work as a Chef de Partie at a restaurant near his hometown and to travel to Spain or Italy to work on his craft.
