Chef Ericka Burke Announces New Projects Chop Shop Cafe & Bar and Juice & Provisions Coming to Capitol Hill

Ericka Burke, chef and owner of Seattle’s beloved Volunteer Park Cafe, is excited to announce two new projects slated to open this fall in the vibrant Pike/Pine neighborhood of Capitol Hill—Chop Shop Cafe & Bar and Chop Shop Juice & Provisions.

Burke’s concepts will be the anchor tenants of Chophouse Row, a new mixed-use building project by Liz Dunn, who developed the nearby Melrose Market. The new project is located at 1424 11th Ave, just south of Pike Street. Burke’s project will be housed in an old auto garage with 22-foot ceilings—most recently the infamous Chophouse Rehearsal Studios. Chophouse Row’s restaurants and shops will be topped with office and living spaces and an alleyway will connect 11th and 12th Avenues alongside the building. The restaurants will open onto the alleyway, turning it into a lively courtyard with seasonal outdoor seating.

Chop Shop Cafe & Bar will be open daily for breakfast, lunch, and dinner and offer a full bar. Breakfast will be a casual affair based loosely on European-style morning buffets; lunch will include a collection of salads, sandwiches, and a la carte items; and dinner will have a broader menu including lots of seasonal produce and a signature “chop.” The juice bar will sell fresh pressed juices and “grab and go” items for the bustling neighborhood, plus a curated selection of culinary provisions.

Burke is thrilled about both iterations of Chop Shop. She’s passionate about the space and creating the same welcoming, warm vibe that Volunteer Park Cafe is known for, but in the more urban neighborhood of central Capitol Hill.

“This part of the Hill is constantly on the go,” says Burke. “I want Chop Shop to be a gathering place, an urban hub, a ‘third place’—home, office…Chop Shop.”
