Pastelitos aren’t quite yet in danger of losing their sweet supremacy in South Florida, but they should watch their guava-filled backs. Pastry chefs from Miami to the Keys are embracing doughnuts in all their glazed glory. You have to wait in line to get a box of Max Santiago’s spiked doughnut holes and strawberry-lemon brioche at The Salty Donut in Wynwood. Former Michael’s Genuine Pastry Chef Amy Kalinowski is working with the team at Fireman Derek’s to open her own coffee and doughnut shop near Little Haiti. Rising Star Megan Pidgeon showcases a constantly rotating seasonal menu of fruit and spice-laced doughnuts at Glazed Donuts in Key West. And on South Beach, Josh Gripper’s light-as-a- feather doughnuts and churros are reason enough to visit The Dutch.
