What’s old is new again. If ever there was a time this phrase applied to the world of food, it’s now. Think about it: heritage breeds, heirloom seeds, ancient recipes, and time-warp menus. This is the era of the old school with new students. Chefs, mixologists, and sommeliers are reaching back, finding character, flavor, and inspiration in the traditions and tastes of the past. And they’re transforming that inspiration into the tastes of the moment, the future of cuisine. So join the band of chef-explorers, heritage historians, beverage scientists, and culinary prophets as they explore the Origins and Frontiers of food and drink—those bookends of time and place that keep this industry growing and define our 7th Annual StarChefs.com International Chefs Congress.

As always, ICC is designed and curated for you, our professional audience. And once more, we’ll explore our theme with the help of some of the industry’s most influential and inspiring talent—presenters including Josean Alija (Nerua at Guggenheim Bilbao), Masaharu Morimoto (Morimoto), Mathias Dahlgren (Restaurant Mathias Dahlgren), Mario Batali (B&B Hospitality Group), Gaz Regan (Ardent Spirits), Elizabeth Falkner (Krescendo), and many, many more. Together they’ll lead you through three days of programming, from marquee Main Stage Demonstrations to Hands-on Workshops and Tasting Panels, all designed to bring together the flavors of innovation and tradition.

We also welcome the return of our Somm Slam and International Pastry Competitions, each now in their third year! And we’re excited to announce our inaugural year of Eat@ICC, featuring a Chefs Products Fair full of Food Carts and Pop-ups—two of the most fun, food forward expressions of resourcefulness and wild card creativity in the industry. Food Carts will be open daily in the midst of our bustling Chefs Products Fair, putting some of the most exciting, must-have NYC food at your fingertips in the midst of some of the industry’s most interesting ingredients and equipment. And savory and sweet Pop-ups will feature high-profile chefs making daily magic with some of our favorite products.

So as days pass, your menus change, and the calendar marches on, remember to put aside three days to celebrate the timelessness of inspiration: September 30 to October 2. The 7th Annual StarChefs.com International Chefs Congress: Origins and Frontiers.

Not that we’re slowing down our regular schedule in the meantime! In the coming weeks and months we’ll be traveling to coastal New England, San Francisco, and the Carolinas, and tasting in our home town, New York City.
