    An Interview with Chef Mathias Dahlgren on the Character of Nordic Naturalism

    In December StarChefs.com Managing Editor, Will Blunt, had the opportunity to interview Chef Mathias Dahlgren at his eponymous restaurant, Mathias Dahlgren, in Stockholm, Sweden. Dahlgren is best known internationally as the first Swedish chef to win the Bocuse d’Or award in 1997. In Stockholm, he’s known for naturalistic cuisine that draws from local ingredients and global perspectives. Sitting down with Dahlgren after a quiet tasting at Matsalen, the elegant dining room within the
    restaurant, Blunt questions the chef about his transformation from celebrated master of classic French cuisine to regional Nordic expert, the nature of a still-blossoming Nordic cuisine, and what inspires an inspirational chef.
