1st Annual Wing Battle at StarChefs Congress
Smoke, confit and fry your way to victory!
For the first time ever on the Congress Main Stage, attendees will go tip to tip, flat to flat, and drumette to drumette to supply spectators and judges with the best dang wangs they’ve ever eaten.
The 2017 Wing Battle will take place October 23rd and 24th at the 12th Annual StarChefs Congress. Teams will be led by Wing Leaders:

The Battle will be judged by a panel of wet-nap wielding experts including David Burke of ESquared Hospitality, Bill Kim of Chicago's BellyQ Brad Orrison of The Shed BBQ & Blues Joint, Director of Culinary Innovation at Buffalo Wild Wings, Amy Smith, Ben Boskovich of Esquire, and representing Kikkoman, Tom Ikeda.
How To Join a Wing Battle Team
All Congress attendees are eligible to sign up for the Wing Battle, just like a Workshop, to compete. Register for your Congress pass here and sign up for a slot to compete. Workshop registration will be available in mid-September. 
Register for the StarChefs Congress
Sign up for the Wing Battle Workshop. Only 25 slots are available on a first come, first served basis. There will be five people on each of the five teams, led by their respective Wing Leader.
Wing Leaders will act as supervisors and coaches. They have been selected, in part, based on a submitted recipe that their team will execute during the competition. Wing Leaders will be able to help cook during prep on Monday, but will only be able to offer verbal assistance on Tuesday during the Main Stage competition. 
Judges will assess presentation, the uniqueness of technique, the successful spotlight of Kikkoman ingredient(s), and taste.
General Competition Information
The five Wing Leaders and their five team members will prepare signature wings and compete on the Main Stage. Day 1 (Monday, October 23) is for prep on-site at Congress facilities. Day 2 is the competition on the Main Stage. 
There will be 300 attendees watching and each team will have to provide 250 wings along with dipping sauce for spectators and judges. Wing Leaders may bring and check in up to five specialty ingredients if he does not think a particular ingredient will be present in the Congress pantry. Products must be in their natural state and must be approved in advance. All sauces, rubs, stuffings, etc. must be made from scratch, on-site at the Congress venue (Brooklyn Expo Center). Kikkoman products must be present in both the wing and in the dipping sauce. 
The winning Wing Leader will be invited back to judge next year’s battle.
