Get your wrappers ready and your fillings on point! 

Congratulations to Bill Kim and his dedicated team on winning the first ever Dumpling Battle. With their Spiced Lamb Dumplings with Soy-Balsamic Rice Syrup, they beat out a slew of tough competitors led by Dumpling Masters Margaret and Irene Li of Mei Mei (Boston), Kate Lasky and Tomasz Skowronski of Apteka (Pittsburgh), and Vuong Loc of China Pie (Seattle). The Battle was judged by Chefs Anita Lo of Annisa (New York), Dale Talde of Talde (New York), Chris Cosentino of Cockscomb (San Francisco), Helen Hollyman of MUNCHIES (Brooklyn), and Tsutomu “Tom” Ikeda of Kikkoman.

Dumpling Battle Prizes:

This year's prizes included:

  • Knives provided by Takamura
  • Gift certificates for two to Ramen Lab provided by Sun Noodle
  • Korin grill provided by Kikkoman

General Competition Information:

Who: Twenty-four ICC attendees who sign up for the Dumpling Battle workshop. Dumpling Masters and Team Leaders Margaret and Irene Li, Kate Lasky, Tomasz Skowronski, Bill Kim, and the winner of the Kikkoman Dumpling Challenge. Judges Dale Talde, Anita Lo, Wylie Dufresne and more. 

Where: The 11th Annual International Chefs Congress at the Brooklyn Expo Center in Greenpoint, Brooklyn. 

How: Four Dumpling Masters with six team members will create a dumpling dish and compete on the Main Stage. Day 1 (October 24) was for prep on-site at ICC facilities; Day 2 was the competition on the Main Stage. 300 attendees and a panel of judges watched and stuffed their faces as each team provided them with a lunch of 250 dumplings along with dipping sauce.
