Liquid Culture: Mixology's Ice Age
The evolution of mixology continues, and for many cocktail concocters the devil is in the details. Ice has become a bit of an obsession within the mixology realm. Its purity, density, and shape can make or break a drink according to ice meisters. Chad Solomon and Christy Pope hosted an entire workshop on the Science of Ice at our Congress. Precision ice machines are keeping up with the demand and offer various forms, sizes and shapes. It’s not unheard of for bars to have more than one ice maker. The growth of artisanal ice even extends to ice carving in a few select cases, like at B Flat in New York.
