Gorgonzola Spread(Yield: 40 servings)
1½ pounds gorgonzola, room temperature and crumbled
2½ pounds Philadelphia cream cheese, room temperature
1 ounce rosemary, finely chopped
¼ ounce kosher salt

Chicken Livers(Yield: 1 serving)
fryer oil
5 chicken livers, soaked in milk
all-purpose flour
salt

To Assemble and Serve(Yield: 1 sandwich)
1 ounce orange marmalade
One 6-inch steak roll, halved lengthwise
½ ounce garlic mayonnaise
4 roasted tomatoes
½ ounce thinly sliced onion
3 thin slices deep-fried Genoa salami
1 ounce shredded iceberg lettuce
hot sauce
vinaigrette
