INGREDIENTS:
Kimchi
4 large heads savoy cabbage, thinly sliced
2 tablespoons anchovy paste
1 cayenne pepper
6 bunches scallions, tops only
12 oysters, shucked
2 tablespoons salt

Yogurt
1 gallon milk
4 tablespoons yogurt

Quinoa
½ cup Peruvian quinoa
2 cups water

Roasted Cauliflower
¼ cup butter
2 sprigs thyme
4 heads cauliflower, cut into florets

To Assemble and Serve
Torn mint
Roasted Cauliflower, Kimchi, Yogurt, and Quinoa
