Culinary Trends: Umami Goes Mainstream
Umami: the mysterious fifth taste and the subject of kaiseki master Chef Yoshihiro Murata’s presentations at our International Chefs Congress this year. What was once a term exclusive to Japanese cooks and culinary know-it-alls has now hit the big time.
Umami, described as the savory taste found in things like mushrooms, meat, and sharp cheese, among others, is being incorporated into everything from main courses to pastry to mixology. Andrew Fleischman launched his Umami Burger concept in Los Angeles, which is obviously centered around the fifth taste and features the umami burger stacked with six umami-rich ingredients, umami ketchup, and more recently the umami cocktail (with Japanese shochu, cucumber, and yuzu).
