The Smashing Pumpkin

Yield: 1 cocktail

INGREDIENTS:

Pumpkin Ale Liqueur
16 ounces Foothills Brewing Co. Cottonwod Pumpkin Spiced ale
1 cinnamon stick
1 teaspoon whole allspice berries
8 ounces light brown sugar
10 ounces Courvoisier VS cognac
To Assemble and Serve
1.25 ounces Famous Grouse whisky
.75 ounce orange juice
.5 ounce Cardamaro
.5 ounce Pumpkin Ale liqueur
cinnamon stick
orange peel

METHOD:

For the Pumpkin Ale Liqueur:
In a small saucepan over medium heat, combine the Pumpkin Spiced Ale, cinnamon stick, and allspice berries. Once the mixture is hot, add the light brown sugar and stir until incorporated. Strain the solids and cool before adding Cognac. Bottle for later use.

To Assemble and Serve:
Combine the Scotch, orange juice, Cardamaro, and Pumpkin Ale Liqueur in a cocktail shaker with ice. Shake and double strain into a cocktail glass. Garnish with a flamed cinnamon stick wrapped in orange peel.
