Rising Star Chef Zakary Pelaccio of Fatty Crab - Biography

Zak Pelaccio held a number of positions in the food industry before pursuing a career as a chef. He ran his own food software business, WiredKitchen.com; trained as a manager and purchasing agent with the Myriad Restaurant Group (owners of Tribeca Grill, Montrachet, and Nobu); and was a scriptwriter and field producer for TV Food Network’s “Dining Around.” Renaissance man Pelaccio eventually got much closer to the kitchen as chef for 230 Fifth, a rooftop lounge and private party space in the Flatiron District, as well as working as executive chef at 5 Ninth.

But to New Yorkers everywhere, and the food community worldwide, Pelaccio is best known as a champion of Malaysian and Southeast Asian cuisines. Prior to even attending culinary school, Pelaccio worked as a cook for half a year at Seri Melayu in Kuala Lumpur, Malaysia, and in the Thai kitchen of the Westin Hotel in Chiang Mai, Thailand. And his inspired menus at Fatty Crab (where he won a StarChefs.com Rising Star Award) and Fatty ‘Cue reflect the chef’s passion for the flavors of his travels.

Rock star king of the Fatty empire, Pelaccio brings those the vibrant flavor profiles and unique ingredients directly to diners. And with the recent publication of Eat with Your Hands, he enables home cooks to enrich their pantries with some of the best of his own repertoire. When he’s not spicing up New York’s palate, Pelaccio is an active member of Slow Food and is on the advisory board of Heritage Foods USA, which focuses on preserving rare breeds of animals indigenous to the United States.
