Bartender Will Elliott of Maison Premiere - Biography

As a 19-year-old college student, Will Elliott ran front-of-house operations at a seasonal restaurant on a small island off the coast of Maine, taking care of Captain-and-Coke-drinking fishermen while his friend took the reins of the back of house. Elliott had full control of the bar, and the duo manned the restaurant—the only one on the island—seamlessly for six years.

When Elliott moved to New York City, he was introduced to the more sophisticated side of mixing as one of the opening bartenders of Maison Premiere in Williamsburg, Brooklyn. Slowly, yet purposely, Elliott rose through the ranks and replaced Maxwell Britten as head bartender. By 2016, Elliott was standing on the stage at the James Beard Awards receiving the medal for “Outstanding Bar Program.”

Also in 2016, Elliott helped open Sauvage in Greenpoint. As a sister establishment to Maison Premiere, the Euro-café style cafe offers more than 200 spirits, six types of ice, and a menu showcasing new and old classics in characteristically fun and flawless fashion.
