A quiet country gentleman, Chef Tim Miller started his career in the front of the house as a bus boy. Eventually he moved to the kitchen when his mentor Steve Yeanish opened his own place. In his younger days, Miller considered joining the army to save money for school, but Yeanish offered to match his savings if Miller stayed and worked for him and went to culinary school instead. And so, he found his way to the Culinary Institute of America and after graduating, was offered a fellowship position at St. Andrews Café at the CIA itself. Miller represented the United States in an international nutritional cooking competition in Germany where he took home the bronze medal. At the Glass Onion, Miller delights in a multi-grained approach, using fresh, seasonal flavors to invigorate traditional preparations. “It’s amazing how much has changed in the last 20 years I’ve been cooking.”
