Pastry Chef Thomas Raquel of Acadia - Biography

On the road to a career in medicine, Thomas Raquel enrolled in a pastry class on a lark after graduating high school at the tender age of 16. What was intended as a fun diversion turned into a whole new direction for Raquel, who completed the pastry program at the California School of Culinary Arts in 2003. He didn’t waste any time getting into professional kitchens, holding positions at Lucques, AOC, and The Water Grill while still in school. Upon graduation Raquel staged throughout Paris, including a stint at Pierre Hermé, before returning to the States for a post at L2O. Laurent Gras proved a valuable mentor for young Raquel, grooming him for his current position, pastry chef of Ryan McCaskey’s Acadia.
