Chef Thao Nguyen of Grey Eagle Casino & Resort - Biography

Born in Vietnam, Thao Nguyen immigrated to Canada with her mother when she was 5 years old. Nguyen’s mother would cook traditional Vietnamese dishes, igniting her daughter’s passion for food at an early age. But Nguyen stayed on a traditional professional path and studied business in college. After receiving her degree, Nguyen decided to expand her knowledge of baking and pastry at the Pacific Institute of Culinary Arts in Vancouver. 

She spent the next few years learning the techniques and presentation skills of classic pastry while working across the pastry spectrum—leading production for coffee shops and contributing to the fine-dining dessert programs at C Restaurant and Canoe. Nguyen also deepened her knowledge by taking classes at the Valrhona School in Brooklyn.

Nguyen joined the Grey Eagle Casino in Calgary as its pastry chef de partie, and she now serves as pastry chef of the bustling winter resort. She hopes to someday open a patisserie shop of her own.
