Rising Star Restaurateur Sergio Navarro of Pubbelly - Biography

Sergio Navarro was born in Spain and learned the fundamentals of cooking from his mother who is from Spain. As he became adept at preparing the traditional dishes of the famed culinary Basque region, Navarro felt that his calling was to cook. He earned a degree in the culinary arts from the Hotel Escuela Comunidad de Madrid, and upon graduating went to work for Sergi Arola at the iconic La Broche, eventually becoming sous chef as well as pastry chef at the two Michelin-starred restaurant. 

In 2001, Navarro moved to the United States to open La Broche in Miami under Chef Angel Palacios before moving on to Mundo to work with icon of American cuisine, Norman Van Aken. Later, Navarro took on the role of sous chef at Nobu Miami and as a corporate pastry chef for the Samba Brands Management before becoming chef de cuisine at Mercadito Miami, alongside future business partner José Mendín. The duo formed a bond that was eventually strengthened with the addition of Andreas Schreiner, and they jointly founded The Pubbelly Restaurant Group with Navarro as chief designer. Now with five immensely popular concepts under the group’s umbrella— Pubbelly, Pubbelly Sushi, Food Republic, PB Station and Pawn Broker—Pubbelly is Miami’s premier restaurant group.
