Native son Scott Walker has a decade-and-a-half of experience managing luxury properties in Austin, Los Angeles, San Francisco, and Palm Beach, including several stings at upscale restaurants and catering companies.As the director for food and beverage services at the renowned Driskill Hotel for seven years, Walker left in 2007, bringing with him several of his coworkers to eventually create Congress, a white-tablecloth restaurant (with no dress code) at the base of a new Austin condo building with a focus on “distinctly American comfort food.” Under Walker’s steady hand as vice president of operations—and with star and Driskill alumnus Chef David Bull running the kitchen—Congress made the top 10 lists for both Esquire and Bon Appetit in 2011.
