A 23-year industry veteran, Chef Satoru Takeuchi got his start—and much of his experience—far from the Windy City. Born in Japan, Takeuchi deferred a degree to pursue an early passion for the culinary arts. It was a passion that took him far abroad, with Takeuchi working in four different Michelin-starred restaurants in France, grounding his technique in the culture and tradition of French fine dining.

But Takeuchi didn’t stop his journey there. His culinary perspective was unabashedly ambitious and eagerly global, with Takeuchi continuing to rack up experience everywhere from Luxembourg and Vietnam to Macau and Malaysia. Before he landed in the United States, Takeuchi led opening teams for seriously polished operations, including Thirty8 Restaurant & Lounge in Kuala Lumpur, and Mezza9 at the Grand Hyatt in Singapore. Now at the helm of the Park Hyatt Hotel and NoMI, Takeuchi is rapidly making a name for himself in a city that’s as global as his career.
