Pastry Chef Rose Sarja of State Road - Biography

Serving skate, rabbit, and soft-shell crab to start, this island favorite in West Tisbury finishes strong, too, with familiar desserts inventively tweaked and modernized as with a Rhubarb-Banana Crostata with Butter-Milk Ice Cream. Sarja, who holds a degree in political theory, worked on campaigns and community development projects in Brooklyn before starting in the restaurant industry – first at Café Steinhof in Park Slope, Brooklyn and then assisting the pastry chef at Cucina. From there she went on to work with Dan Barber of Blue Hill, The Gramercy Tavern and Per Se before ending up on Martha’s Vineyard at the State Road’s, where along with Chef Austin Racine, she makes up one half of a diligent and popular back of the house duo.
