Pastry Chef Paul Padua of Delaware North - Biography

Before he became a chef, Paul Padua studied hotel and food and beverage operations, food preparation, and electronic engineering at Guam Community College in Mangilao, Guam, and he holds a bachelor’s degree in commerce management from Ortanez University in his native Philippines. 

After getting his education, Padua embarked on a more than 20-year career that had him hopping throughout Asia and through the Pacific Rim to Hawaii, Las Vegas, and eventually California. He has also served as a pastry chef-instructor at the College of Southern Nevada. He joined Delaware North in 2008 as Executive Pastry Chef at the Ahwahnee Hotel in Yosemite National Park, California.

Padua has been recognized both domestically and internationally for his pastry and baking skills.  He was selected as a Team USA member in Rimini, Italy for the Gelato World Cup in 2010. The next year, he was named ACF Western Regional Pastry Chef of the Year and served as team captain at the National Pastry Team Championship. 

In 2012, Pastry & Baking North America Magazine featured his white chocolate panna cotta on its cover and highlighted several of his creations. Padua was also a competitor on “Sugar Dome” on the Food Network. He is also an active member of the American Culinary Federation.
