Brooklyn-born Mike Fischetti cut his chops in his grandma’s kitchen, playing “find the spice” as she cooked family dinners and pots of her famous Bolognese simmered on the stovetop. Leaving New York, Fischetti refined his skills at Michelle’s Fine Dining in Bar Harbor, Maine, where the team earned AAA Four Diamond Awards three years in a row—he also earned a gold medal in the 2005/2006 Junior Culinary Olympics. Next, Fischetti moved to the warmer climes of South Florida, where he worked at Citas Italian Chop House and Chef Cindy Hutson’s Ortanique on Miracle Mile. During his time in Miami, he helped the Ortanique team win “Festival Best Dish” at South Beach Food & Wine in 2008. In 2010, Fischetti helped open Hutson’s Ortanique Grand Cayman, and he now serves as the restaurant’s executive chef.
