Chef Michael Paley of Garage Bar - Biography
As executive chef of Metropole at the 21c Museum Hotel in Cincinnati, Ohio, and previously as the executive chef of the acclaimed Proof on Main in Louisville, Kentucky—where he also owns and operates beloved neighborhood joint Garage Bar, Michael Paley is devoted to regional cooking traditions and to local agriculture. He also knows how to keep food fun. Paley’s Garage is a bar three times over: it’s a beer bar, oyster bar, and ham bar.
Before getting into the biz and becoming a dominate force in the Ohio River Valley, Paley got his start as a busboy at a bowling alley/restaurant in Washington, New Jersey. He was immediately drawn to the excitement, passion, and camaraderie of the kitchen. After graduating from Florida State University and the Florida Culinary Institute, he worked with several noted chefs, such as Daniel Boulud.
In 2005 Paley was tapped to open Proof on Man at 21c (where he made his mark over a six year tenure) and the rest is culinary and hip hotel history.
