Sommelier Levi Dalton of I'll Drink to That! - Biography

Levi Dalton has carved himself a career by speaking the language of wine. He has worked as a sommelier in some of the most distinguished and acclaimed dining rooms in America. After starting out at the Federalist in Boston, Dalton helped open Cafe Boulud in Palm Beach, Florida. He then moved to New York to work at both Daniel and Cafe Boulud, and subsequently revamped the wine program at Masa. In 2008, Dalton joined Chris Cannon at L’Impero (later Convivio) to cultivate a 440-selection wine list focused on Southern Italy, as well as its all-Italian beer list and amaro and chinato menu. In early 2010, his attention shifted to Northern Italy as he headed up the wine program at Alto.

Today, Dalton is delivering his knowledge as the host of “I’ll Drink to That!,” a podcast that tells stories about the lives and work of knowledgeable wine professionals. Dalton has also written on wine themes for various publications, including Bon App├ętit, Eater, Wine & Spirits, and The Art of Eating.
