Chef Ken Schloss of Huggo's - Biography

Chef Ken Schloss came to Hawaii for the beaches and beauty, but he stayed to make a name for himself cooking traditional Hawaiian fare with his own unique twists. Having studied at the California Culinary Academy, Schloss has spent nearly 20 years working in Napa Valley and later the Caribbean, expanding his repertoire to exotic techniques and products. The California-born chef moved to Hawaii in 2011, however, after visiting the Big Island on and off for nearly a decade. He originally took a position on the Pride of America cruise ship, overseeing the five restaurants on board. But a few months later, he joined the family-owned Huggo’s On the Rocks as executive chef, with the goal of becoming one of the names in farm-to-table cooking on the islands.
