Chef John Shaw of The Tides Beach Club - Biography
Chef de Cuisine John Shaw started as a dish washer when he was only 14 years old. He grew up in Kennebunkport and tourism, restaurants, and hotels were the main source of income for anyone looking for a job. At the time, he had no particular interest in cooking, but over the next couple years, Shaw realized just how interesting food could be. When the owner of The Tides Beach Club encouraged him to go to culinary school, he jumped at the chance and ended up attending the New England Culinary Institute in Vermont. In 2006, he was invited to cook at the James Beard House, a true treat and high honor for any chef. A fan of Gordon Ramsay, Shaw counts as his mentors Bob Smith, a chef he grew up with and Ken Oringer, consulting chef at Earth, his “go-to-guy,” as he puts it. Currently, Shaw splits his time between ski resorts in the winter and the beaches in the summer and loves every minute of it.
