Chef John Folse of R'evolution - Biography

John Folse grew up surrounded by the flavors and indigenous ingredients of St. James Parish, Louisiana. He absorbed and grew passionate about the ins and outs of Louisiana culture and cuisine. Folse opened Lafitte’s Landing Restaurant in 1978 when he was 32 years old. Bolstered by the success of his flagship establishment, Folse decided to take on the role of unofficial ambassador for Louisiana cookery, taking the regional cuisine worldwide.


From 1985 to 1988 Folse opened five restaurants is such countries as Japan, France, China, and Russia. During the 90s he set up shop in London, Seoul, Bogota, and Taipei. Folse also started a publishing company called Chef John Folse & Company and published nine of his own Creole and Cajun cookbooks, as well as works from other authors. Folse has since hunkered down in his home state and partner with Chef Rick Tramonto to start the restaurant development company Home on the Range: Folse Tramonto Restaurant Development, LLC in 2010. Restaurant R’evolution, at the Royal Sonesta Hotel New Orleans in the city’s renowned French Quarter, was the first restaurant to be established by the company in April 2012. Folse continues to inspire and teach new generations of chefs with his restaurants and at The John Folse Culinary Institute at Nicholls State University in Thibodaux, Louisiana which opened in October 1994.
