Jared Rouben of Goose Island Brewpub - Biography

Building flavor drives Jared Rouben. After graduating from Washington University in St. Louis, the Louisville, Kentucky, native sought out a culinary education, soaring through both the Culinary Institute of America and the Siebel Institute and World Brewing Academy. After schooling, Rouben proved his snuff, working as chef at Michelin one-star Martini House in Napa and as an expeditor at Thomas Keller’s Per Se in New York City. From New York, Rouben hit the Windy City to explore the liquid side of the hospitality business, joining Chicago’s outlet of the Rock Bottom brewing company. In 2009, Rouben signed on with the Goose Island Clybourn brewing team, and became the pub’s brewmaster in early 2010. As Goose Island’s resident know-it-all, Rouben has applied his culinary knowledge to crafting seasonal, experimental beers, and he launched a highly successful Chef Collaboration Series and Farmers’ Market Series that connect the pint glass with Chicago’s foremost chefs and farmers.
