Rising Star Mixologist Jacyara de Oliveira of Sportsman's Club - Biography

As a college student taking some time off to travel a bit and teach English, one evening Jacyara de Oliveira found herself mixing drinks at her then-boyfriend’s business, a space where concerts were thrown, beers came from a cooler, and cachaça and cigarettes were plenty. De Oliveira worked the situation the best she could, unwittingly, found her future profession as a cocktailier.

Once in Chicago, de Oliveira began working in far more official environs. Climbing the ranks, she started as a barback and server at The Drawing Room, where she was exposed to the sophisticated, well versed approach of Charles Joly’s polished cocktail lounge. Later gigs at places like Perennial Virant, Belly Q, and Folklore allowed her to tack new ideas, flavors, and strategies onto her own evolving style.

It’s now a style known beyond Chicago, as an ambitious de Oliveira threw herself into national opportunities like Speed Rack (where she is a national finalist), Tales of the Cocktail (where she was a cocktail apprentice), and the San Antonio Cocktail Conference. In collaboration with 2013 San Francisco Rising Stars Scott Baird and Josh Harris, de Oliveira is the Chicago attaché for their consulting firm The Bon Vivants. A Food and Wine “Woman to Watch,” de Oliveira is at the helm of high-volume Sportsman’s Club, where she combines speed, skill, and natural teaching instinct to make her mark on Chicago’s drinking scene. In 2015, de Oliveira earned a StarChefs Rising Star Bartender Award for her work.
