Chef Izabela Kalabis - Biography
A native of Niagara-on-the-Lake, Izabela Kalabis brings to Inniskillin impressive experience with her three years in France and thorough training in classic French cuisine.
Her love of cooking was inspired during her first trip to the Loire Valley, where she had originally planned to learn French as an au pair and a tutor. While living in France, she was exposed to fine food, and this ultimately led her to study at La Varenne in Paris. Under the guidance of notable Chefs, such as Fernand Chambrette (La Boule d’Or, a two-star Michelin restaurant) and Claude Vauguet, Izabela received the Grand Diploma d’Etudes Culinaires, in June 1987.
After graduating, Izabela apprenticed at a number of reputable Parisian restaurants, and completed additional studies at L’Academie du Vin (Steven Spurrier) and L’Ecole de Gastronomie Ritz-Escoffier. Her last assignment in France was working as a private chef to Mr. and Mrs. L. Huebner, publisher of The International Herald Tribune.
Since joining the Inniskillin staff, Izabela has prepared many creative and sumptuous dishes for a wide number of guests attending receptions, luncheons, and formal dinners in the Champagne Loft. Her personal challenges have ranged from preparing venison from locally raised deer to an all-Ontario products menu. She has delighted guests who enthusiastically ask her culinary secrets, and sing her praises.
