Pastry Chef Hynn Yam of Madera - Biography

Hynn Yam began his pastry career in celebrated establishments around Hong Kong. After baker positions at Panash Bakery and La Rose Noire, Yam worked as a pastry chef at King Ludwig Beerhall. Then came four formative years at three Michelin-star L’Atelier de Joël Robuchon, Hong Kong, and next the Swire Hotel. Relocating to Shanghai, Yam worked at Michelin-star Sir Elly’s Restaurant at The Peninsula. Yam moved on to Rosewood Hotel, Beijing, as an executive pastry chef, overseeing six restaurants and two banquet rooms. 

He eventually transferred to the Rosewood Sand Hill Hotel in Silicon Valley, California, where he is currently responsible for the Michelin-star restaurant Madera, room amenities, banquets, and seasonal displays. Yam took home a gold medal at the 2012 Anchor Pastry Challenge.
