Chef Hallot Parson of Escazú Artisan Chocolates - Biography
After a trip to Costa Rica's cacao farms in 2005, Hallot Parson was inspired to jump into the world of chocolate. With a background as a chef, he founded and became the head chocolate maker of Escazú Artisan Chocolates in Durham, North Carolina. Together with his partner, Danielle Centeno, he makes chocolate from century-old recipes, using beans carefully, thoughtfully, and personally sourced from Central and South America. He not only crafts his own chocolate but has also converted equipment to fit Escazú's small-scale, hands-on chocolate making.
