George McNeese of Pensacola, Florida, spends his days finding the strangest ingredients possible and learning to transform them into something edible. A former waiter at The Modern, McNeese is no stranger to the New York City culinary scene. However, with no formal training in the kitchen, he fuels his restaurant through a personal obsession with cooking and a strong curiosity encouraged by co-Chef Justin Warner.
