A native of Kissimmee, Florida, Drew Dzejak learned his passion for cooking from his grandmother and uncle. And at just age 15 years old, he tested his family's culinary heritage in the kitchen, landing his first job at a bakery, where his primary responsibility was making wedding cakes and pastries. Clearly enamored of the field, if not quite sold on the pastry side of it, Dzejak moved to Charleston, South Carolina, to attend Johnson & Wales University, graduating with degrees in Culinary Arts and Food Service Management.
Dzejak next tested his culinary mettle around southern kitchens, including Wild Dunes Resort on the Isle of Palms, and the Woodlands Resort & Inn in Summerville, South Carolina. While at Woodlands, Dzejak was part of the team that won the Mobil (now Forbes) Five Star Award. And before leaving the Carolinas, Dzejak served as chef de cuisine at the Charleston Place Hotel.
A specialist in modern American cuisine, Dzejak (who goes by "Chef Drew") joined The Grill Room at the Windsor Court in the fall 2008. Now executive chef, Dzejak oversees breakfast, lunch, and dinner for the restaurant. Under his guidance, The Grill Room has received a rating of four beans from The Times-Picayune, with the headline, "The Grill Room Reclaims Its Greatness." In addition to being credited as the reviver of his restaurant, Dzejak has also recently been recognized as a New Orleans City Business Culinary Connoisseur, and he was named a Louisiana Cookin' "Chef to Watch" in 2010.
