General Manager Dewey Dufresne of wd~50 - Biography

Born 1946 in Providence, Rhode Island, Dewey Dufresne has been involved in the food industry for more than 40 years. He opened the legendary Joe’s sandwich shop in 1969 in his hometown, which still survives to this day (albeit under new ownership).

More recently, Dufresne opened 71 Clinton Fresh Food in 1999 with a number of partners, all of whom lived on the Lower East Side of NYC. He hired his son, Wylie Dufresne, to be the chef. The restaurant became an overnight success with Dewey acting as maître d’ and wine manager. In 2003, Wylie returned the favor, opening wd~50 and hiring Papa Dufresne to design the restaurant, run the wine program, and orchestrate the front of house.

Defresne is still running the wine program but no longer working on the floor. He is now pursuing a long-held dream of opening a sandwich store in Manhattan. His sandwich concept, BYGGYZ, debuted at the San Gennaro Festival in the fall of 2011.
