Rising Star Chef David Gilbert - Biography

Dallas native David Gilbert was inspired by his grandfather, who owned a butcher shop and taught him to cook with simple seasonings and the freshest ingredients. After studying at Johnson and Wales University, Gilbert moved to Europe to work at Michelin-starred Restaurant Vermeer in Amsterdam, before returning to the United States and working at a restaurants across the country, including The Ritz-Carlton in Buckhead, Atlanta; The Orient Express at The Inn at Perry Cabin in Maryland; St. Louis’s Eau Bistro; and The Beverly Hilton’s landmark restaurant.

At Luqa in Dallas, Gilbert’s his innovative dishes earned him a 2007 StarChefs.com Rising Stars Award. After traveling through Southeast Asia, Southern Africa, and Europe in 2009 and 2010, Gilbert returned to Texas, taking over as executive chef at San Antonio restaurant Sustenio in 2012. His most recent project, the Asian street food-inspired Tuk Tuk Tapoom, is set to open in San Antonio this summer.
